Hanz, I would go i7 if you can, maybe compensating the additional cost of the i7 CPU by going for less DDR3.
I have an i7 930 (stock 2.8Ghz - 8 virtual CPUs with HT) with 6GB Corsair DDR3 (CAS 8) and I can run every game @ 1680x1050 on max settings, the only games that suffer with stuttering are ones with poor engine optimisation or ones that require a load of disk access (hard drive bottleneck).
I've never known Win 7 64bit to use more than 4GB whilst gaming, or tax all 4(8 virtual with HT) CPU cores.

I don't really see the point in getting the i7 2600K.
The only difference with the i5 2500K is the additional Hyper Threading, for an extra €100,-
And isn't HT only worth having when you do video editing or rendering (which I don't)?!
unless games will profit from it?

As of now, very little benefit.
However, that said, more and more games are making use of multiple cores, it seems to be a fairly safe assumption that as games get more complex and demanding of the CPU, they will make use of HT.
Bad Company 2, GRID, UnReal Tournament III, L4D2 are 4 games I can currently think of that make use of HT by spreading the load over 8 cores (on an i7)
I recently read about a game (sorry, cant remember if it was one of my flight sims or a future release) that will use 1 core just for processing sound. Maybe in the future devs will structure games to offload certain intensive tasks to individual cores (ie: sound, physics, etc).
If its going to be a while before your next upgrade, an i7 CPU may be better in terms of future proofing your PC (you could use a single core to run your hacks!).
Also, I believe the i7 also has a larger memory bandwidth than the i5.
I think more than 6GB ram is excessive unless your going to use it to create a RAM drive to run certain disk-intensive apps/games from.

I've been looking at IPS screens. At first I had the LG E2370-BF in mind but with only 1 year warranty and several cases of blacklighting I'm skipping it.
Now I'm looking at the Dell UltraSharp series. The U2311H looks like a contender when it comes to IPS and gaming.
A new line-up will be available in Q3 2011 so I might wait for the specs to pop-up on the interweb.
Anyone have experience with a Dell UltraSharp?

UltraSharp no experience, but they usually get top marks in reviews across the line.

Yes, I have a 22" Dell 2209WA Monitor with an IPS panel - bloody lovely monitor, no ghosting, good colour range...Im really happy with it.
Being one of the Ultra Series monitors, it qualifies for
Dell's Premium Panel Guarantee which means a replacment from Dell if you get a dead pixel under the warranty period.
IPS panels are well better than TN ones, especially the viewing angles.

a small update.
I got my psu tester and it seems everything is just working fine.
Next step... try a different gpu.
